Litti Chokha is a traditional Bihari and Jharkhand dish that is quite similar to Rajasthani Baati but still very different. The litti is the bread made out of flour and is stuffed with sattu and chokha is the side dish made using eggplant, potato or tomatoes. Here is how to make Litti Chokha Recipe.
Preparing litti chokha is easy but takes a lot of time. So make them at your own pace and time. For the stuffing you will need sattu. Sattu is basically roasted gram flour. The whole wheat flavour is kneaded into a soft dough with salt, ghee or melted butter. Add Some carom seeds or ajwain to flavour the Litti and keep it aside for 15-20 mins.
The stuffing is mde of Sattu or roasted chana dal flour, grated ginger, finely chopped green chillies, pickle masala, lemon juice and salt and add some oil to it while mixing it.
Litti is usually roasted on hot charcoal or dried cow dung fire. This is the traditional method of roasting litti and the taste of littis made this way is very different. At homes an oven can be used to bake littis. If you have charcoal based open grill, then you can use it for roasting littis. You can even roast them on tawa or fry them.
Next the Litti is assembled by taking a small ball of dough and stuffing it with the prepared stuffing. Finally, the littis are laid out and baked in an oven till it’s browned on all sides.
After cooking the litti in oven, just keep it over the direct flame to get those black blisters all around. This will not only enhance the taste.
The chokha is also prepared using roasted baigan and tomatoes. A simple flavouring of chopped onions, green chilli, chopped coriander, salt, mustard oil and lemon juice are added in to make the chokha.
Dip the Litti in desi Ghee and serve hot.
