Tindora, Kovakkai, or Dondakaya is called Ivy Gourd in
English. It is also called as Tondli, Tendli, Thondekai or Kovakka in various
parts of the country.
Kundru Fry is a simple everyday sabzi where Kundru or Tindora is cooked along with onions and spices such as coriander powder, red chilli powder, turmeric powder and salt.
It is an easy sabzi that hardly takes 30 minutes of your
time, making it apt for your everyday meals.
One of the benefits of the Tindora vegetable is that it
helps lower blood sugar and is great for treating diabetes.
INGREDIENTS –
- Tindora/Kundru/Ivy gourd (chopped) -250 gm
- 1 Medium Onion, chopped
- Green chilli(slit)- 1
- Garlic (chopped)- 5-7
- Cumin seeds-1/2 tsp
- Turmeric powder- 1/3 tsp
- Red chilli powder- 1/3 tsp
- Cumin powder- 1/3 tsp
- Mustard seed - 1 tsp
- Cooking oil- 2 tbsp
- Salt to taste
METHOD TO MAKE KUNDRU FRY –
- First wash the Kundru with water and pat dry it.
- Remove stalk from both ends and dice lengthwise making 2-4 pieces. Likewise dice all Kundrus.
- Marinate the Kundru with oil, turmeric powder, red chilli and salt, mix it well land keep aside for 10-15 mins.
- Heat the pan put oil in the pan.
- When the oil is heated put jeera (cumin seed) and mustard seed to the pan next add crushed/cut garlic to the pan for tempering for 1 min
- Add Onion and cook till it turns golden brown.
- Now Add Kundru to the oil saute it in the medium flame for 5 mins.
- After 5 mins, turn the flame to low and cook for another 15 mins.
- Now Kundru will turn soft and change in colour can also be seen, nice aroma coming from the pan.
Yummy healthy Kundru Fry is ready. Serve Kundru Fry with
chapatti, parantha or rice and relish eating.
