The sandwich has many layers stuffed between 2 breads and
sandwiched between the layers is tomato, onion, baby corn, green chilly, cheese
and paneer.
Gather all your ingredients – bread slices, coriander-mint
chutney, cheese slices, butter, rounds of onion, tomato, green chilly, cheese
and paneer and Let’s start making this delicious sandwich.
Healthier Option - To make these sandwiches healthier, you
can use brown whole wheat bread. You can add grated cheese in place of the
cheese slice.
INGREDIENTS –
TO MAKE CHUTNEY –
- 1-2 Chilli, Whole for Chutney
- 3- 4 Garlics
- 50gm Coriander leaves
- Half Tomato
TO MAKE SANDWICH STUFFING –
- 50gm Baby Corn
- 1-2 Onion, finely chopped
- 1 Cucumber, finely chopped
- 1 Tomato, finely chopped
- 3-4 Chilly, finely chopped
- 2 tsp Mustard Sauce
- 1 tsp Peri- Peri sauce
- 2-3 tsp Mayonnaise
- ½ tsp Salt, to taste
- ½ tsp Black Pepper Powder
TOPPINGS –
- 6-8 bread slices
- 50gm Paneer, cut in small cubes
- 2 Tbsp Mozzarella Cheese
- 2-4 Cheese slices
- 3 Teaspoon butter to toast

INSTRUCTIONS TO MAKE –
TO MAKE CHUTNEY –
- In a blender add 1 cup chopped fresh coriander leaves, 1-2 chopped green chili, half tomato
- Add 1 tsp mustard oil, ½ tsp salt, add little water to blend all the ingredients in a blender to make smooth chutney paste.
TO MAKE SANDWICH STUFFING/MIXTURE –
- Take a mixing bowl, add 50gm Baby Corn, finely chopped Onion, Cucumber, Tomato, 3-4 Chilly, 2 tsp Mustard Honey Sauce, 1 tsp Peri- Peri sauce, ½ tsp Salt, to taste and ½ tsp Black Pepper Powder
- Mix everything well to make stuffing.
- Take 2 bread slices and apply butter generously all over.
- Now apply coriander chutney on the bread slices.
- Now add the Stuffing and spread on the top of 1 bread well.
- Add Paneer cubes, Mozzarella Cheese and Cheese slice
- Cover this layer with the 2nd bread and press gently to seal the sandwich nicely.
- In the same way you can make the all the sandwich.
- Now your sandwich is now ready to be grilled.
- Heat the grilling/frying pan on medium heat. Put some butter and spread it all over the pan.
- Apply butter generously on top of the sandwiches and place the sandwiches in the pan with the buttered side facing down.
- As the sandwich grills from one side, now apply butter on the side facing up.
- Once the 1st side is nicely toast and turn brown in colour, flip the sandwich to toast the other side. Press down the sandwiches once in while with a spatula.
- The sandwich is now toasted well, take it off from the frying pan.
- Toast all the sandwich in the same way.
Delicious Bombay veggie grilled cheese sandwich is now
ready to eat. You can serve it with tomato ketchup.
