The taste of Dhaba food is phenomenal and we usually find
these dhabas on highways. They cook some amazing dishes in traditional style
which enhances the flavour of the dish. Dhaba Style Egg Curry is one such
recipe which is spicy, tasty and full of flavours.
We make the same egg curry with the dhaba vibe to it all you
need is the desi rotis and chawal and a dinner arrangement under the sky for
the typical dhaba experience. Egg curry similar and yet so different that you
would want some more each time you eat it.
Anda curry is famous North Indian Style curry popular in Dhabas (Indian road side restaurants) which is packed with mega flavors! It’s easy to put it together and enjoyed best with naan or Indian flatbread. Can be served with rice too!

INGREDIENTS FOR EGG CURRY –
- Oil – 1 tbsp
- Coriander powder – ¼ tsp
- Cumin powder – ¼ tsp
- Turmeric powder – a pinch
- Red chilli powder – 1 ½ tsp
- Salt – a pinch
- Boiled eggs with cut marks all over – 5
FOR THE CURRY –
- Oil – 4 tbsp
- Powdered clove – ¼ tsp
- Cinnamon powder – ½ tsp
- Cumin seeds – ½ tsp
- Onion- 2 finely chopped
- Ginger garlic paste – ½ tsp
- Grated tomato – 3
- Green chillies – 2
- Chilli powder – 1 ½ tsp
- Turmeric powder – ¼ tsp
- Coriander powder – ¾ tsp
- Cumin powder – ½ tsp
- Roasted besan – 2 tsp
- Water – ½ cup
- Salt to taste
- Kasoori methi – 1 tsp
- Coriander leaves for the garnishing
COOKING INSTRUCTION –
- For the egg fry, in a pan heat 1 tbsp of oil, add the coriander, cumin, turmeric and the red chilli powder, mix all the ingredients.
- Add 5 boiled eggs with the cut marks to the pan followed by some salt.
- Fry the eggs with the masalas for 2 minutes and keep it aside.
- In the same pan heat 4 tbsp of oil with powdered cloves, cinnamon powder, and the cumin seeds in the given quantities.
- Add the finely chopped onions and fry all the ingredients till onion starts turning translucent.
- Now add some ginger garlic paste, grated tomatoes, and green chillies.
- Mix all the ingredients together cover the pan with a lid and let it cook for another 3 to 4 minutes.
- Further add some chilli powder, turmeric powder, coriander powder, cumin powder, mix well and fry all the ingredients for 1 minute.
- Add the roasted besan with some water and salt to taste.
- If required add another cup of water and let all the ingredients boil for 5 minutes on a low flame.
- Add the fried eggs to the gravy, give it a good stir.
- Cover the pan with lid and leave it to cook for 5 minutes on low flame.
- Finally add the kasoori methi and coriander leaves for extra taste and garnishing.
Dhaba Style Egg Curry is usually served on the road side dhabas in North Indian with Bajra Ki Roti or Makki Ki Roti or Naan.
