Mango Shrikhand or Amrakhand is a traditional Gujarati – Maharashtrian recipe made using hung curd and fresh mango puree. Shrikhand is made in many flavors and it is creamy & luxurious Indian sweet dish. You can garnish the Mango Shrikhand with aromatic saffron for a pop of color and flavor.
The only thing to be taken care for making any Shrikhand is
using thick yogurt. Homemade or store-bought yogurt, both works fine. The
yogurt has to be tied in a clean cloth and hung, which will help in straining
the whey, resulting in thick creamy yogurt also called hung yogurt.
But apart from Mango flavour, you also get other variations
like Butter Scotch Shrikhand, Orange Shrikhand, Pineapple Shrikhand, Strawberry
Shrikhand to name a few. So this summer, get ready with some hung curd and
mango puree and make delicious, chilled Amrakhand within minutes.
TIPS TO MAKE THE BEST MANGO SHRIKHAND –
- Use fresh Alphonso or Kesar mango pulp, the mango should be really ripe and juicy.
- Use plain unflavored yogurt and not low fat or fat-free
- Homemade yogurt also works well for this recipe
- Never use a blender to mix the curd with mango puree.
- You can have this dish for Vrat or Indian fasting.
INGREDIENTS –
- 1 kg Curd
- 1/2 cup Mango Puree
- 1/2 tsp Cardamom Powder
- 1 pinch Saffron
- 1/4 cup Powdered Sugar

HOW TO MAKE MANGO SHRIKHAND –
- Take a large bowl with a double layer of cheesecloth or muslin cloth. Pour the yogurt onto the cloth.
- Now bring the ends of the cloth together and hang it on support to drain the water from the curd.
- Let the curd hang for 3-4 hours.
- Squeeze out any remaining water by tightly pressing against the tied yogurt.
- Empty thickened yogurt into a mixing bowl.
- Mix well with a slotted spoon or whisk for 5 minutes until it is smooth.
- Add Sugar, Cardamom Powder and mix well for another 5 mins.
- Yogurt should be smooth and lump free.
- Add the mango pulp and Whisk/mix well for another 5 mins to make it smooth.
Garnish with saffron strands, chopped almond and chill for an hour before serving. Serve Mango Shrikhand with hot puri’s and batata bhaji (spicy potatoes).
