Papri chaat is a traditional street snack found all over India. Papris are crispy chips made from a simple wheat dough. Much like nachos, the papris are topped with assorted accoutrements of complementing and contrasting textures and flavors, and always dusted generously with chaat masala, a fragrant and flavorful spice mixture.
Papdi Chaat is a yummy snack assorted with a crunchy base of
Papdi (crisp puris) which is topped with lip-smacking chutneys, veggies, and
curd. The crispy Papdi topped with potatoes, onions, chickpeas, chutneys, curd,
and spices offers a gamut of flavours in its one morsel.
INGREDIENTS –
For Making Papdi –
- 2 cup wheat flour / atta
- ¼ cup rava / semolina / suji, fine
- 1 tsp ajwain / carom seeds
- ¾ tsp salt
- 2 tbsp oil
- ½ cup water
- oil for frying
For Making Chaat –
- 10- 12 Papdi
- 3 Potato / Aloo, boiled & chopped
- 3 tbsp chickpea, boiled
- 1 Medium size onion, finely chopped
- 5 tbsp curd, whisked
- 3 tsp green chutney
- 3 tsp tamarind chutney
- Pinch of chilli powder
- Pinch of cumin powder
- Pinch of chaat masala
- Salt as per taste
- 1 tbsp tomato, finely chopped
- 3 tbsp sev
- 1 tsp coriander, finely chopped

INSTRUCTIONS To MAKE PAPDI CHAAT –
To Make Papdi –
- In a large mixing bowl take 2 cup wheat flour and ¼ cup rava.
- Add 1 tsp ajwain, ¾ tsp salt and 2 tbsp oil.
- Crumble and mix well making sure to form a moist flour.
- Knead the dough well-adding water as required.
- Knead a tight dough as of poori and divide the dough into half.
- Dust wheat flour and roll slightly thick as of poori.
- Using a cookie cutter/glass cut small round puri.
- Prick the papdi with a fork to prevent from puffing up.
- Heat oil in a frying pan and fry the papri in medium hot oil.
- Fry on low flame till the papdi floats, this would take approx 1-2 minutes.
- Continue to fry on low to medium flame till they turn crispy and golden in colour.
- Drain off the papri over kitchen paper to absorb excess oil.
- Alternatively, bake the Papdi in a preheated oven at 180-degree Celsius for 15-20 minutes.
Making Papdi Chaat –
- In a serving plate take Papdi. Top it with boiled potato and chickpea.
- Now add/sprinkle the chopped onions.
- Take 3 tbsp of whisked curd and drizzle over it.
- Add 2 tsp of green chutney and 2 tsp of tamarind chutney.
- Add the chilli powder, cumin powder, chaat masala and salt.
- Additionally, you can also add 1 tbsp chopped onion and tomato.
- Add 1 tbsp of more curd, 1 tsp green chutney and 1 tsp tamarind chutney.
- Top the chaat with 3 tbsp sev and garnish with chopped coriander leaves.
Finally, enjoy the Papdi Chaat with a hot cup of Masala Chai.
NOTES –
- You can also top the chaat with pomegranate seeds.
- Serve the Papdi Chaat immediately after assembling.
